  5. In a separate bowl, beat the heavy cream until stiff peaks form.
  6. In another bowl, beat the mascarpone cheese and vanilla extract until smooth.
  7. Gently fold the cooled egg mixture into the mascarpone cheese mixture.
  8. Then, fold in the whipped cream.
  9. Dip each ladyfinger in the cooled espresso or coffee, being careful not to soak them for too long.
  10. Arrange the soaked ladyfingers in a single layer in the bottom of a 9×13 inch dish.
  11. Spread half of the mascarpone mixture over the ladyfingers.
  12. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
  13. Cover and refrigerate for at least 2 hours or overnight.
  14. Before serving, sprinkle the top with cocoa powder.
